Full City roast stops where the coffee beans had shown signs of 2nd crack. The actual temperature that second crack normally occurs is higher at 446 degrees of internal bean temperature. A medium dark brown appearance with occasional oil sheen, roast character is noticeable at the beginning of second crack. This is also a common roast level for espresso blends.
